What happened to my Balsamic Vinegar?

Uncorked a bottle of Saba Balsamic Vinegar tonight to put on a salad when Bill B and Lill came over for dinner. I turned it upside down and only two tablespoons came out of the bottle, leaving a hockey puck of Balsamic Vinegar(?) in the bottom of the bottle, which accounted for about 30% of the bottle's capacity.

What's the deal? Is this like honey where it needs to be warmed, or...

Joe, no idea. I own a lot of balsamic vinegar (gifts from well-meaning friends all). I probably have two or three bottles open at any one time and each lasts me years. Never had this happen. Not familiar with Saba, but what you describe makes me wonder if this is a manufactured balsamic, that is, lesser industrial balsamics mixed with sugar at high heat and reduced to create a more complex and viscuous balsamic texture. I have a gift bottle of that kind of product in the pantry, too.

What Jenise supposes sounds reasonable. Did you buy cheap stuff, Joe?

Since balsamico is essentially cooked must at that level, I would assume it could easily thicken, congeal and clump

la SABA, is not a balsamic vinegar :wink: saba is only the cookec grapemost.

it looks like youre was never "filtered" or "let sit down" bevor bottling.

you could have shake the bottle well bevor using.

but if you have still balsamic vinigar at home, you can fill up the saba and shake it, it should turn out nice 8)

That's okay, Tsunami: some of the wines Joe likes are basically cooked must as well.

Maybe he could add some of his SABA to the wines to improve them? :)

I'll try anything twice.

It's rather thick (doesn't shake) so I'll try mixing something in.

It's not Balsamic Vinegar? Hmmph.

Not knowing what saba was, I was going to ask if this was "live" vinegar. Unfiltered live vinegar will form a "mother" after air exposure. As I'm bottling my vinegar, I run through a coffee filter, but sometimes a glob right out of a 50s horror film can still form. Harmless, though.
