Anybody have a recipe for pasta and chicken?

Looking for something a little different - a little lighter maybe (but not necessary!!) - for a weeknight dish. Thinking tomato base vs. cream but open to any ideas at all

Had a great dish tonight at an Italian joint....

Spinach pasta topped with grilled chicken, arugula (this month's featured ingredient), sun dried tomatoes in an alfredo sauce. Delicious.

Not exactly "light" though......

John, our favorite is one I have duplicated from our favorite little Italian joint outside of Boston.

-Season two boneless chicken breasts with salt and pepper and saute in a little olive oil and garlic.
-Set cooked chicken aside.
-Cook some penne pasta in a separate pot.
-Add 1 cup of low-salt chicken broth and 1/2 dry white wine to the chicken pan drippings. Toss in about 2 cups chopped raw broccoli, about three minced garlic cloves and about 1/8 tsp of red pepper flakes. (More if you like a lot of spice.) Cover and steam until broccoli is almost tender.
-Slice cooked chicken into strips against the grain on the bias. Add to the broccoli mixture. Toss chicken and broccoli mixture with drained pasta.
-Add additional EVOO, and check seasonings. I always add more salt and pepper at this point.
-Can top with Parmesan cheese, but it isn't necessary.

Mmm. I'm going to have to make this soon. :)

John,

Check out Bill Spencer's recipe for chicken paillards (his post uses singular, but it should be plural as 'paillard' refers to a flattened chicken breast). That would be fab served on pasta.
