Quick question: what do you call

the little curved blade thingy on a handle with which you slice baguettes before baking? Someone must have given me one and I used it tonight. My son asked me what it was called and I have no idea.

Ahh, channeling Alton Brown! :)

You're right, though ... a sharp chef's knife or even a box cutter will get this job done. In fairness, though, Howard mentioned that his lamé knife was a gift.

True. No judgement on Howard, just on the lamé.

And I channel Alton quite a lot. I got to know him (and his very understanding wife) back in his culinary school days. Not surprising, but he is as crazy in person as he is on TV.

Laura and I took several (well more than several) hobbyist classes at NECI when Alton was in culinary school. His wife was the director/organizer/something of those classes. He was a frequent helper in various aspects, and we were quite friendly with both of them after a while, especially his wife. It's always funny to recall a specific day when we were taking a week-long bread class (that had only 5 participants!). We're busy kneading dough, shaping loaves and baking while Alton is off to the side washing prep dishes. So I can say that I had a celebrity wash dishes for me.

Howie, it is indeed a lame - wish I had one too ! Don't trust myself with anything that sharp - I, like Larry, use a serrated knife.

I have a lame knife, which is really a double-edged razor blade. I use a serrated knife because it works better for me. Some people use a old-fashioned straight razor.

The lame is silliness incarnate. I grew up in a bakery. We used a paring knife.
