What do I do with all these tomatoes?

by Hanie » Thu Apr 26, 2007 5:20 am

I was at the wet market yesterday buying fresh veges for the restaurant and it seems that the season of tomatoes on my side of the pond has arrived..there are sacks and sacks of them at the market. It is selling so cheap, at RM1.00 for about 30 pcs (about USD .38 cents).

I want to take advantage of this abundance and to create something that can be displayed in jars etc over the outlet's counter but cant think creatively enough. So guys? Help?

Wasn't there a thread around here recently about making tons and tons of pasta sauce and freezing it in dinner-pot-sized portions? Well, anyway, if you process your jars correctly, you shouldn't need to freeze 'em. Tomatoes have enough acid to stand around.

Oven-dry?
