Help wanted: what is "tomato sugo"?

I think it's basically a term for tomato sauce. Not positive, but I think that's more or less correct.

Tomato Sugo is usually the term referring to traditional Sunday Sauce (or "gravy" as my family would put it).

In some regions it is a meat based sauce, starting with neckbones and/or sausage browned in olive oil with lots of garlic and building from that. The version with no meat is usually tomatoes, olive oil, garlic, lots of basil, fresh grated cheese.


Either way it is a fabulous and easy sauce, a staple in any good Italian household!

Piling on, Bob, "sugo" literally translates as "sauce" in English. Check the index pages in any of Marcella's cookbooks (for example) and you'll find loads of recipes for all manner of <i>sugi</i>, from tomato to clam to just about anything edible.
