RCP: outstanding salsa cruda (pico de gallo)

1/2 cup chopped onion
1/2 finely chopped celery
1/4 cup finely chopped green bell pepper
1/4 cup EVOO or salad oil
2-3 Tbs finely chopped green chile or to your taste
2 Tbs red wine vinegar
1 tsp mustard seed
1 tsp crushed coriander seed
1 tsp salt
Dash black pepper

Combine all ingredients, cover and chill for several hours or overnight

So it's a green chile salsa. I would probably use white wine vinegar instead of red for the sake of color, but flavorwise it sounds delicious. Showing my lack of language skills here, though, I'm surprised it is or can be called pico de gallo without including tomato.
My wine shopping and I have never had a problem. Just a perpetual race between the bankruptcy court and Hell.--Rogov

Actually, you're right. I took liberties with the name, figuring salsa cruda didn't sound too great. Regardless, it tastes great with chips.

I don't think red wine vinegar makes any major difference in color, but I believe it has a rounder flavor.

I totally agree re red wine vinegar, but in this instance I just might choose the other to avoid the stain.

Too harsh, and would look even dirtier than red wine.
