I live in NYC where there are plenty of Jewish joints, as well as Jewish mothers and grandmothers. Leaving aside the soup made by my ex- upstairs neighbor, the diner near my office has good chicken soup and good matzoh balls! (The only thing they do wrong is they don't add dill... a sprinkle of dill is essential to the soup.)
