Parmesan Cheese

What is your opinion of Pamesan Bel Gioioso. I have used Parmigiano Regiano for years. Used to buy a wedge from a wheel of it from Raley's. The store I loved closed and the one I frequent now offers the cheese mentioned above.

Sorry to say it's terrible. It's a mass-manufactured American product that lacks the pungeance of the real thing from Italy, and it doesn't melt/dissolve.

Costco has the real thing. So does Trader Joe.

Last night, I grated it, cut off a piece to taste, and found it nutty and flavorful. It grated well, came out nice and fluffy to put onto Laura Calders' salad, and went well with the dressing and lettuce. I have not tried to melt it. Yes, I knew Costco and TJ's carried the real deal. I never get to either one these days...no reason, just not on my scope as I am cooking so differently now with just one in the house. I love TJ's and was actually on the committee to get them to come to Redding. I found issues with them when I found products I loved only to have them disappear the next time I went to purchase. They have awesome plantings, very creative, I like their tortillas, and a few other things that seem to be able to remain on the shelves.
