Interesting. We have crawfish here in New England, but I don't know of anyone catching them commercially. All the effort is on their larger, sea-dwelling cousins (lobstahs).

Up here we call them crayfish. Other areas say 'crawfish' or 'crawdads' - for some reason the different pronunciation took hold largely in the U.S.

'Crayfish' is the most common spelling and pronunciation here in New England. 'Crawfish' is the Louisiana spelling, and Paul Prudhomme was most emphatic in his books that it is the only correct one. :)
