Drying Basil Leaves

My basil plant was huge and starting to take over my free-standing herb tub just outside the kitchen door. I keep my most used herbs
in that tub and the rest in the back of the house in a raised bed. I cut the plant down to the soil line, tied the stems together, and hung them in the laundry room to dry. It took three weeks to totally dry. I then put them on a large sheet pan and started pulling the leaves off the stems. Those went into my little food processor and the unit ground them to the perfect little flake. I put that into a glass jar and have been using them in salads, on veggies, and scrambled eggs. Delicious! The plant in the tub sent up some new leaves, not sure it will survive our winter even though it is under the patio roof, it will get too cold for basil.

Good for you! I briefly considered drying my tarragon but never got around to it. I'll have to make do with Penzeys.
