Nice dinner and wine pairing with no meat or fish

I'm limited to shellfish and veggies. I'm trying to make a nice dinner to pair some interesting quality wines. In the other forum, I talked about how my original plan was a Cabernet sampling. Now that no meat is involved, I'm learning more towards a crabcake or scallop type of appetizer paired with a full-bodied Chardonnay or even a Vigonier, and then move to to something, like pasta or shrimp, with red or spicy sauces and pair with a Pinor Noir.

Any thoughts on menu or wines when I'm this limited?

If you can include cheeses, your possibilities multiply. Ditto with eggs. Do not overlook wild mushrooms. Red-friendly and vegetarian are not at all mutually exclusive.
