Sushi fish vs. non-sushi fish

by Jenise » Sat Apr 24, 2021 6:04 pm

I judge what fish is good for raw eating by what I see served in sushi restaurants. For instance, swordfish never shows up in sushi, and neither does cod. But an Italian chef friend insists that in Italy, they would happily eat both as crudo. Are we missing out?

Raw cod is good; I've had it (a long time ago) at a restaurant named Esca (...Italian for 'bait').

Cod (tara) is served as sushi in Japan.
