Chocolate

by Larry Greenly » Sat Mar 06, 2021 3:51 pm

When I buy a chocolate bar, it's usually dark chocolate in the 85-95% cocoa solids range. Today I discovered a really dark bar at Trader Joe's (their chocolates generally top out at 72%). It's called Montezuma's 100% Dark Chocolate Absolute Black with Cocoa Nibs. The British bar is 93% chocolate liquor and 7% cocoa nibs with 0 sugars and a net 2 g carbs per 25 g.

Really intense, but I like it.

I like a little more luxury in my bars, 65-70%. I can see the appeal of higher ratios but it's a tad ascetic for me.

Low carbs aren't a feature of that 65-70% (and too much sugar for me). I get my chocolate fix with higher percentages of cocoa. In my case, it's either high percentage or none at all, unfortunately.
