Killer Cookbook

by John F » Sun Jan 03, 2021 11:18 pm

My wife and I (ok mostly me) are pretty voracious cookbook buyers and users... even in the online era. Just thought I would pass on the we have been cooking our butts off using Melissa Clark’s “Dinner”... amazingly varied ideas, interesting and complex flavors - but simple prep and sourcing generally. Our hit ratio has been very high whether it is vegetarian, pasta, grain bowls, chicken, pork... one after the other. We got all three of our kids this for Xmas and they are blazing away.

Just thought I would pass along... happy new year everyone

What is distinct about the recipe?

My son and I make pancakes every Sunday morning, but have not gotten too crazy/creative with the recipe, aside from altering various flours.

I have several Melissa Clark pancake recipes. Which one in her cookbook is the one you're talking about?

Sorry read too fast... thought you were asking for the name of the cookbook itself. There is not a pancake recipe in this book but here is an awesome looking savory Dutch baby which looks insanely good.... need to make that.

If you Google Melissa Clark pancake recipe you will find what you need.... looks like whole wheat flour plus some buttermilk/yogurt... probably pretty good!!

I figured.

FWIW, Clark's Dutch Baby recipe is all over the internet. I've made those in the past. Certainly amazing how they puff up.

Ack, apologies, we have really enjoyed Alison Roman's pancake recipe.

It's Melissa Clark's waffle recipe that we like. Works for both Belgian and American-style.

Both rely on buttermilk, which certainly gets my vote for greatest increase in the pandemic. We're using twice as much flour, but 20 times as much buttermilk.
