Thats pretty much it. We don't cook with fennel. But we like it raw.

2 fennel bulbs - washed, dried, trimmed & sliced

Shaved parmesan reggiano

Dress w/ EVOO, salt & pepper

It crossed my mind to do something like this last night, but I never really looked into a recipe or thought about what to put into it. But we had one leftover bulb for tonight, so I did exactly as Richard stated and it was very good. Went very well with some warmed up Grimaud Farms duck confit and roasted fingerlings.

Good stuff there Richard. Raw fennel is so palate cleansing. I've made something similar with an added squirt of lemon or orange juice too. If I want to get all fancy I toss in a few pomegranate seeds.
