Anyone using huacatay and aji amarillo chile ?

I've been nosing around Peruvian chicken recipes and see these two items. https://www.thespruceeats.com/peruvian- ... ay-3029606. Certainly not available fresh in Wisconsin but wondering if anyone has a source or comments on use. I have found seeds for the huacatay but would appreciate any recommendations on sources and uses.

Smith's (Kroger) grocery stores carry their Private Selection Peruvian Aji Amarillo in 6.25 oz bottles. Inexpensive and tastes really good. One of my faves.

But Larry, that's the sauce and not the chile itself, right?

I've never laid eyes on either one, Christina; just had a sauce in a peruvian chicken restaurant that I suspect was dumbed down to suit local palates.

Yes. But it's got a nice fruity taste along with heat. It's actually quite good.

Goya sells aji amarillo paste, not always in local supermarkets but Latinx groceries here often carry it (I've been not buying Goya, would have to look to see if they have other brands). That article is first time I've run across Huacatay.

I’ve seen the sauce for both of these at a Mexican market only once. Bought a Peruvian brand of both through Amazon a couple years ago. They were pretty close to the sauces I had on a trip to Peru in ‘18. Will look up the brands.
