I started watching this over 3 hour youtube video of Jacques Pepin and had a hard time pausing as each segment is reasonably short and often more than slightly interesting. I bet other cooks will get caught up in it too!

Thanks Bill, had a brief look and look forward to finding time to view more.
I’ve owne his books La Technique and La Methode for years and they have been good friends in my kitchen.
