Sesame Mucho

by Bill Spohn » Wed Aug 26, 2020 5:37 pm

Found this in a recently published book and just loved it. Made a big platter full and that's all we had for dinner (says me, Mr Meat!). Very seriously good!

Cumin-roasted string beans and tomatoes with tahini and cilantro

1 lb 2 oz cherry tomatoes , mixed colours, if possible
2 tbsp extra-virgin olive oil
flaky sea salt
freshly ground black pepper
1 lb. 2 oz green beans , stem ends removed
1 1/2 tsp cumin seeds
2 tsp sesame seeds
2 tbsp roughly chopped cilantro leaves

Dressing
1/4 cup tahini
juice of 1/2 lemon
5 tbsp water , plus more if needed
2 garlic cloves , finely grated
4 tbsp extra-virgin olive oil
1 tsp clear honey

Preheat the oven to 400°F.

Put the tomatoes into a roasting pan or on a baking sheet that has a lip all the way around. There needs to be room to add the beans later. Toss the tomatoes with 1 tablespoon of the oil and season them well. Roast in the oven for 10 minutes.

Toss the string beans in a bowl with the remaining 1 tablespoon of oil and the cumin seeds. Scatter the beans on top and around the tomatoes. Return to the oven for a final 10 minutes. At the end of the roasting time, the tomatoes should be completely soft and the beans slightly charred.

To make the dressing, mix all the ingredients together in a bowl and season well. The tahini will “seize” and thicken when you add the lemon juice, but don’t worry, it will break down again when you add the water and beat hard with a wooden spoon. Tahini varies in thickness, so you might need more water than I’ve suggested here to achieve a dressing as thick as cream.

Spoon the dressing onto a plate, place the vegetables on top, and scatter with the sesame seeds and cilantro.

2 oz of tomatoes and 2 oz of green beans? You are light eaters!

Thanks for pointing that out. For some reason the site software no longer gives me a space at the left hand margin and it is hard to see what is printed there when I proof it.

I've noticed the same annoying thing.

Me too. I thought I'd done something to cause that. Really annoying to not know where your cursor is (if we're talking about the same thing.) Why would that change?

Bill--interesting recipe! Definitely my kind of food, and cumin seeds are a new fascination. I mean, I've always had them around, and powdered cumin too, but the seed form is curiously different in flavor and a Russian rice dish that I tried recently which is lavished with cumin seed brought all that home again. I'm craving that flavor.

I love that you of all people are finding a vegetarian dinner so enchanting!

I'm thinking that I'd use this on a small dinner plate as a separate course in a multicourse meal accompanied by an interesting white wine (Greco?) or a light red.

I'm not seeing the left margin problem. What OS and browser are you using?

It would be a fantastic intro to a lamb main course.

I'm on Google Chrome, Paul, and Windows 10. The problem never existed for me until recently but I didn't bother Robin about it as he'd have to spend money on his tech guys to figure it out and they'd probably say there was nothing wrong anyway. Interesting that Jenise notices the same thing. What OS/browser are you using Jenise?

Gotta go now - doing an old Rhone (CNduP) lunch! (Which would you serve - 95 Beaucastel or 2001 Dom. Pigout?)

Same set-up, Bill. And it only started maybe 3 months ago--if our issues are identical. I can see my cursor within the message EXCEPT when it's at the far left border. There it just disappears. While writing and editing a more complex post it's a PITA to have to type a letter just to find out where you actually are (then backup/delete before getting on with it).

Are we really going to pollute another thread with runaway pun-ishment?

I use Firefox and I'm not seeing the problem. I suspect it's a Chrome bug. I suggest reporting it to Google.

I'm also on FireFox. No edge-of-input-box problems here.

Not sure wether this is a pun?

I'm on Chrome, and the margin thing didn't happen until somewhat recently.

Now I'm using Opera and still have the left-margin problem.

Opera uses the Chrome rendering engine these days.
