I have been experimenting with roasted chicken and citrus flavors - what herbs would you use with oranges, lemons, etc.

Jim, thyme with lemon is pretty classic. But that said, I don't know an herb that doesn't go well with lemon. Orange? It's probably also true of orange, though orange also tempts me toward fennel seed and spice islands spices like cinnamon. Star anise, too. I'd encourage you to play with it--poultry is such a great, broad canvas for this kind of experimentation. You probably can't go wrong.

Judicious rosemary use would be good with the citrus, although I agree with Jenise that most combinations will be worth trying.

The classic Greek pairing of Oregano and lemon is hard to top.

Frankly, I do not care for rosemary with chicken. It overwhelms.

With orange, I like robust Hungarian paprika and garlic.

Agreed. Along the same lines, as I was preparing to serve last night's roasted chicken breast dinner and slicing oranges for our water glasses, I thought, "Ground chiles! I should have mentioned ground chiles!"
