Simple answer: when it feels dull. About a year ago I threw mine out and started over. Was pretty surprised at how sharp the new ones were, my stuff was even duller than I'd realized.

I got mine at a restaurant supply store for 4-5 dollars. They had several types for grating different stuff.

On a related subject, does anyone know somewhere in the US that can resharpen those tiny blades of a mandoline?

Oh, the Mandoline Blade Sharpeners Guild has locations all around the world. You can find the phone number of the nearest office... just let your fingers do the walking. :twisted:

It's a Bron mandoline. I got it at E. Dehillerin in Paris in 1997.

Ouch!

If it were mine and I were sequestered (like for Covid-19), I'd consider getting a set of microfiles of various cross section (Harbor Freight?) for a couple of bucks. Then, while watching a tv program, I'd use a magnifying headpiece or a magnifying glass and just slowly file away and maybe use a small ceramic to hone the edges,

I'd bet you can make the blades sharper and save the price of a replacement. .At least for a long while.

It's possible to replace just the julienne blade assembly (Bron calls them the cutters). Prices range from $40-$65. I could get one for $3.95 if I get an Amazon Rewards Visa card. :roll:

The Benriner mandoline has a blade that you can sharpen as needed on the usual stone, and finish on (suitably) a Japanese water stone, if you have one. A bit unwieldy as access is limited, but OTOH, unless you are slicing tin cans or something, they seem to stay sharp almost indefinitely.

The removable blades (for julienne etc.) need to be replaced but not very often.
