Don't try this at home

For Christmas Eve dinner I made too much lasagna - one big pan and one small pan, using the dry-pasta assembly method.
Christmas Eve Lasagna
After cooking both, I served the big one, with leftovers for the next day and froze the small one, intending to thaw and re-heat when my son was home on R&R from Iraq. I covered it in foil, wrapped it in plastic wrap and put it in the freezer. Yesterday I thawed it out and re-heated it in the convection oven. While the spinach, peppers, sauce, cheese and meat were fine, the lasagna pasta had almost turned to a gooey mush. The flavor was fine, but the lack of any firmness in the pasta was a bit of a letdown. Perhaps if I froze it before cooking it may still have been OK. Oh well, live and learn. Next time, just make less and eat it all up. :?
