RCP: Creamy (but creamless) rhubarb vinaigrette

Just made this. It's delicious, fantastically smooth with an luxurious mouthfeel usually only obtainable with dairy products. Obtained from a website called Chatelaine:

1 c chopped fresh rhubarb
1/4 c water
2 tblsp maple syrup (or honey)
1 tblsp red wine vinegar
2 tsp Dijon mustard
1/4 cup olive oil

Boil the rhubarb with the water in a small saucepan, then add to a blender with the remaining ingredients. After blending, as always adjust seasoning to your taste--I added a minor amount of additional honey, a pinch of salt, and half a clove of garlic (enough to give it an additional layer of flavor but without making it noticeably garlicky. Then add:

1 tblsp poppy seeds.

Can't wait to make a salad!

Sounds great, but I'd opt for honey over the maple syrup. Can't wrap my head around maple syrup/rhubarb. [Could be wrong, though.]

Larry, the maple adds complexity along with the sweetness (as would most honeys). It's such a minor amount, though, that I'd say it doesn't matter much which you use. I'm not a conventional maple syrup user (I don't eat sweet breakfast foods) but I do keep a jug of Grade A on hand for use as a liquid sweetener so I had no problem using that as recommended.

I've always preferred the Grade B darker maple over the light Grade A version, but it's not easy to find. The Vermonters must hoard it for themselves. My major bummer is only Edie eats it now because I'm low-carb. :cry:

I'm sure if I ate waffles and pancakes and donut frostings (my favorite maple thing in the world) I'd be a conneuisseur of the Grade B stuff, but I'm not. The grade A from Costco is inexpensive and just fine for my purposes.
