Waddaya use for bread scoring?

by Larry Greenly » Wed Jan 01, 2020 1:49 am

I've used all sorts of implements for scoring bread: a lame, a single-edge razor blade, a serrated bread knife, and even a weird little knife I found at a thrift store--the blade is curved like a scimitar, but its whole width is only about 1/4 inch with micro-serrations on one side only (I have no idea what its original purpose was). Next, I'm going to try one of those little plastic utility knives with snap-off blades. I'll let you know.

FWIW, I recently discovered a use for blue cornmeal: if you dust it over your dough before baking, your bread comes out with an appearance of having been baked in a wood-fired oven (looks a bit like ashes).

Hi Larry.
Like you I’ve tried a variety of implements and for the nonce I’ll stick with the utility (craft) knife as the most effective I’ve used thus far..

I've often wondered if an obsidian scalpel would work.

I don't usually make bread, so no real input on your question.

Long time no see - how are you doing, and where have you been?

Nice to hear from you, too. I missed the back and forth, but my life got in the way. Now some FLDG members I knew are no longer.

I saw the Grim Reaper pass nearby a couple of times in the last few years, but I'm still vertical and doing just fine. Up to a year ago, I was juggling my life and my responsibilities at the nonprofit SouthWest Writers. Years of ugly politics and stress, but the good guys and I finally prevailed in wresting control from the bad guys, and we don't see them anymore. It's like micro-national politics. If you've ever been on a nonprofit board, you know what I mean.

Anyway, to shorten the story, I retired exactly one year ago from SWW and instantly fell ill for a couple of weeks, sleeping 24/7 on the couch. Never did figure that one out (it's very rare for me to get ill, it's usually some part breaks). Then to top it off, exactly one year ago, my wife had a series of syncopes and resulting concussions. Took us eight months and dozens of doctors to finally figure out her heart would stop beating randomly for as long as 15 seconds. Now she has a pacemaker. Aren't you sorry you asked? Any rate, we're both doing well now.

I'm now on the board of the Military Writers Society of America, but the duties are way less. I can't say no, I guess. I've screwed around a lot this holiday season (procrastination, no doubt), but I'm getting back to writing again.

It's late at night here, and I'm probably babbling, so best if I end now.
