I tried something new with my oatmeal this morning. I need to cut back on my fat/cholesterol intake but still crave creamy oatmeal. This seemed to do the trick:

2 c. Water
1/2 c. Steel cut oats
Large pinch sea salt
1 Super heaping Tbsp (or more) Almond Butter

Bring water to boil. Add oats, reduce heat, and simmer for 15 minutes without stirring.

Add salt and almond butter. Stir to dissolve and continue stirring occasionally for 10-15 more minutes or until thick.

Turn off heat and let stand for 5 minutes before serving. Serve with maple syrup.

Robert, I suffer from the same high cholesterol problem you describe. Almond butter may give you health benefits, but I've been using Take Control or one of the other similar spreads to provide creaminess in my morning oatmeal.

The health benefits seem to be better documented and the mouth feel is very similar to almond butter in my preferred embodiment of oatmeal, the Silver Palate Thick and Rough Oatmeal.

Very different from steel cut oatmeal, of course, and your mileage may vary.

Add some niacin supplements (not niacinamide) to your diet (1000-1500 mg/day). In conjunction with your daily oatmeal or oatbran intake, it'll help help drop your cholesterol levels. Find a slo-release variety. And you might want to gradually ramp up your level until you don't flush as easily.

The slo-release comes in 500 mg sizes.
