Actually, a Laura Calder recipe. Bill discussed it around Christmas time in a holiday related thread, but it deserves it's own thread now.

Delicious, vegetarian, beautiful on the plate, and a relatively easy do-ahead course for dinner parties with no last-minute complications.

Indecipherable? I see the eggplant hockey puck on the left, tomatoes on the right. You don't? (But yes, thanks, this is the recipe. Apparently it got moved--I just copied Bill's link and know for a fact that the recipe and picture came up back when he posted it.)

I cannot see the hockey puck on the left. I just see a dark swirl from upper left to lower right, and a background of mush.

Jeff - you must be puck challenged - the pic comes up for me. Wonder what's happening there?

Jenise - let us know how it turns out for you. Great dish for pretty much any white wine plus a lot of reds, no?

Bill, I used a long half-round terrine form that would be equivocal in height/width/density to your individual cocottes and yield about a dozen 1.25 inch slices. I added an additional 10 minutes to the cook time to ensure it was set, and a toothpick came out clean. I chilled it for two hours before inverting and slicing--it was gorgeous, but sadly it didn't set in the middle.
I had to toss it. Pretty crushed!
