Does cod exist?

My cuz gave me some cod fillets yesterday, which solved my daily problem, "What to make for dinner?"

I made baked cod, accompanied by a fresh salsa made of orange segments, sliced onions, green chiles, and cilantro, seasoned with a little pepper and salt. A few salted pepitas thrown on top of the cod and even my wife commented on how good it was (she's not a big fish lover). Oh, and washed down with Pepperwood viognier.

Today's the last day I live with a much younger woman (2 years younger than me). Tomorrow, she increments up to just one year younger. Unfortunately, we both work tomorrow and I might have to postpone the festivities until the next day.

I'm staring at a 12-hr day and wondering if I have the stamina: 7:30am, MC a new SWW member breakfast; 10am-noon, MC a program on memoir writing; 1-4pm, teach a workshop on writing for magazines; and then change into Lounge Lizard Larry and play the piano at a French restaurant starting at 6pm. I just don't understand people who retire and say they're bored. I'm busier now than I ever have been.

BTW, the same cuz gave me a flat of Green Giant canned corn. I usually buy frozen. Any suggestions what to do with it?

You suggesting you're not going to eat it?

It would make a church or other charitable organization very happy.

Otherwise you could reserve it for high flavored foods, like Southwester taco salads, cajun stuff [they use corn?], or whatever.
I can certainly see that you know your wine. Most of the guests who stay here wouldn't know the difference between Bordeaux and Claret.

Corn chowder. I have a nice, simple recipe, and I use canned corn. You could also use it with black beans to make a quick salsa.

Mix it up in corn bread. I like to do that with the creamed style corn.

I sometimes make Chinese velvet soup with creamed corn. Very tasty.

Wow...Larry, that Cod sounds so good. I haven't had good Cod in probably 20 yrs. My Parents own a beach house and often catch loads of Fluke (like founder or I think it's Plaice (sp?) in the UK). The taste of fresh fish is just unbelievable!! I will have to write down that recipe for the summer when I have a few pounds of it.

Sounds like you have a crazy day tomorrow. Happy Birthday to the lady of the house.

As for the canned corn...I would check the ingredients, as it probably contains salt and sugar. If that is the case, I think a corn bread like Howie suggested would be good.

Canned corn is really not bad as a sidedish veggie either if you drain well, add some butter, dill, and maybe some of those chopped green chilis!

(You know come Spring, I'll be hounding you for some chilis...well you offered right? :lol: )
