Mike - I have never heard of Carnitas, but I am intrigued.
John - you may be right. I have never stewed leftover pork before. But I often use leftover leg of lamb to make lamb stew and leftover beef roast for a beef stew and they come out nicely. I was hoping to do something similar with the pork, but not sure if I can.
