Kumquats

Well, I bought a pint of these today. It is the first time I have ever tried them. They are good...taste like little oranges to me. It's a little weird at first eating the peel, I must admit, but it did taste good.

So my question is has anyone ever cooked with them, and if so, any good recipes? Salads? Meat dishes? Looking for more savory type dishes rather than desserts. Thanks in advance!

I've not tried them with prosciutto before, but it should work well along the lines of other antipasto combinations in the earlier prosciutto thread.

See the movie "It's a Gift" for a great kumquat scene.

I slice them thin and use them to brighten up salads or provide a color and citrus element. They go particularly well tossed with sea beans.

It might not be the most effective way to use them, but you can substitute for oranges in just about anything.

Bon Appetit had a variation of cranberry sauce with kumquat in place of orange zest, that sounded good to me. The floral aroma is also good when making a soy-based dipping sauce.

Funny you should mention kumquats. I tried some kumquat preserves at the Fancy Food Show just today. It tasted a bit like orange marmelade only lighter, brighter with a lemony touch.

Thanks everyone for all the ideas! I will certainly try them. I really like the idea of a bean salad with them...and the prosciutto sounds good too.

Love kumquats, but I don't cook with them much. Perhaps the only savory prep I've had them with was sauteed with not-sure-what into a sauce that was spooned over seared foie gras on brioche. Pretty nice, that.

Use them in stuffing for a turkey or Cornish game hen. (I love fruit stuffings!)
