RCP: Vodka Cream Sauce with Green Peppercorns

For many, many months, off and on, I’ve been looking in our file for this recipe, (which I think is fantastic, especially over salmon). Last night, my lovely wife goes to a box that sits on top of the file folder and finds it in 5 seconds flat and asks “This one?”
Everything I found on the web was too time consuming. This is quick and simple.
Forgive me if you all know this one, but it's so good I've got to share it:

1 stick of butter
1/2 cup Vodka
1 & 1/2 cups whipping cream
2 Tbsp green peppercorns in water, drained and crushed
3 Tbsp Lime Juice
Salt and pepper to taste

Melt half the butter.
Add Vodka and cream and boil 5 minutes or so until thickened.
Add the peppercorns and the rest of the butter.
When the butter's melted, add Limejuice and salt and pepper to taste.
Serve over salmon (or anything else you can think of and let me know how it was)

Sounds great! Two questions tho. First, what are "green peppercorns in water?" Is that something store-bought or do you soak the peppercorns yourself?

Second, the recipe does not seem to have any vodka in it for the chef. What's with that?

Mike,

It might that only 1/2 cups of vodka is left after the chef finishes with it.

Sounds like fun kitchen.

Both good questions, Mike, thanks for the reply.
1) I buy dried green peppercorns and soak them myself in a small dish. They soften and then I drain them and crush them between the side of the dish and the back of a spoon. I bet there's 'wet' green peppercorns out there though.
2) Where do you think the other 1/2 cup of Vodka (not mentioned in the recipe) goes? :wink:
