Bone Broths

So am I the only one amused by the current rage in Bone Broths? I mean, I've spent my life trying NOT to boil bones so as to NOT get cloudy (not just appearance, but flavor) stock from all that loose protein, and suddenly it's the THING to do and there are all these artisanal brands out there selling for $$$.
My wine shopping and I have never had a problem. Just a perpetual race between the bankruptcy court and Hell.--Rogov

I know, it is crazy. And achieves about 50% of almost nothing. A few minerals extra maybe, certainly I doubt there is much in the way of additional flavour, and nutritionally see above achievements. And given that no one seems able to make a decent Demi glacé commercially I can't imagine the commercial bone broths perform any better.
A local "celeb chef" who espouses the paleo diet came under fire recently for recommending bone broth for babies.

It reminds me of an old saying about money for old rope!!!

Ugh. Don't get me started.

I became aware of "Seolleongtang", the Korean ox bone soup, years ago from watching K-Dramas. Never tried to make it myself, but did have it once or twice at Korean restaurants out of curiosity. I didn't really see the appeal, but accepted it as part of their national cuisine, which is fine of course.

But this current western trend is just an affectation. Or abomination. Take your pick.
