I've loved what Moroccan food I've had. Which has largely been at two restaurants in Southern California over the years, a restaurant called Momo in London, and the occasional theme dinner with friends who cook. At the last one of the latter, I prepared a basket of seeded flatbreads and a curry-like dish of large sautéed shrimp tossed with lamb meatballs in a charmoula sauce pretty darned heavy on the combination of cilantro and mint. A pretty out-there combination, shrimp and lamb, but my god was it good! It was my own creation but based on something I'd tasted somewhere in the long-ago past. If I ever wrote a cookbook, that recipe would have to be in it. Unfortunately, I've never made it again--must rectify!
