Inner Beauty Ghost Sauce

Something caught my eye in the produce isle of my local Indian grocery store--fresh ghost chiles. I didn't know fresh ones were available in the USA. So I bought ten of them and used them in a batch of Inner Beauty hot sauce. Usually I make the sauce using twenty habaneros or scotch bonnets, but this time I used ten ghost chiles and ten scotch bonnets (for flavor). I've posted the recipe for Inner Beauty hot sauce in this forum. It's a West Indies-style hot sauce with a base of mangoes and cheap yellow mustard.

After making the sauce, I waited a day for the flavors to marry before trying it out. I mixed 1/2 teaspoon of it with some spaghetti to make "Pasta from Hell", as made famous by the (now closed) East Coast Grill in Cambridge MA. This was pasta from the 9th Circle of Hell! Fiery hot, with a slow burn that lingered in my mouth for minutes afterward.

While it retains the flavor of Inner Beauty, the Ghost Sauce is many times hotter. It reminds me of Dave's Insanity Sauce and friends. The recipe yields about two cups, and I think that will last me a couple of years.

You have one heck of a constitution, my friend. Btw, I did use your Inner Beauty recipe (it's great)--one batch lasted about three years. On a taco, I could tolerate exactly three dots.

Btw, every now and then I run into someone who says they can't eat this or that "because it (or they) repeat on me". I don't even know what they mean by 'repeat', but green bell peppers is often one of the named culprits. I've always found that odd if not questionable--I've never had any reaction to anything beyond an allergy to porcini mushrooms. But just this week I seared off a batch of padrone peppers which caused an immediate and regrettable reaction: burping, almost painful burping, from a sudden air bubble deep in my gut that I most inelegantly struggled to dispel.

Hopefully just a one time thing--I can't imagine having to give up peppers!

"Repeat" means gastroesophageal reflux. Very unpleasant. I suffer from GERD due to a hiatal hernia. In my case keeping my weight down and eating smaller meals keeps it pretty much under control, but for some people particular foods can trigger it.

In the Indian food aisle of our local Southeast Asian market, I spotted a jar of Naga pickle. Naga viper chiles are a close relative of the ghost chile. I've had Indian pickles made from conventional chiles (serranos, or something closely related), and that was hot enough for me. I won't go anywhere near an Indian pickle made from naga vipers.

I'm not sure, but maybe me too. Except mine seemed to be more of an inherited malfunction of the esophagus. Things just stop working. I can't even swallow saliva. My mother has had to visit the hospital a dozen times to have food "pushed down".

Been totally quiescent except for one recent incident, but I used to be notorious for running for the bathroom choking. :shock:
