For each cup of cooked rice: (I used Jasmine)
Puree in blender, add to cooked rice. Stir well.
2/3 cup cilantro, loosly packed
1/3 cup chopped onion
1/4 cup chopped green onions
1 jalapeno pepper, chopped (or to taste)
1 Tbsp. fresh lime juice
1 tsp. EVOO
