Well Stuff My Goose......

Any fave goose stuffings?

Like some fruit but not into sweet fruit throughout for a goose stuffing. Like apple and onion = good, while all prune not so much.

Need help stuffing my bird!

MASHED POTATO STUFFING:

4 c Mashed potatoes (not instant)
2 c Fresh breadcrumbs
1 tsp Salt
1 tsp Pepper
2 tsp Sage
2 oz Bottle Onion juice
1 Stick melted butter

Mix all ingredients together in mixer.

Carl, I have never seen bottled onion juice. Is this a New England thang?


Bill, chestnuts. Or Chet's Nuts, as you might prefer to say it. Gotta have chestnuts with goose.

The particular bottle we have right now comes from MA, but we had no problem finding it when we lived in Omaha; so it is not a New England thang.

Reporting back, I decided to do a stuffing (actually cooked on the side as I stuffed the goose with leeks and apples for their aromatic contribution) of chestnuts and prunes moistened by brandy. Worked out very nicely.

Accompanied by carrots done with cardamom and ginger and onion. After the sudden and inexplicable local dearth of celeriac, we opted to forget about the mashed celeriac and potato and go without starch - the goose was rich enough anyway.
