Indeed. Although 'authentic' is a mostly-meaningless marketing buzzword for all kinds of cultural production (music, acting, comedy, tv, etc etc).
And I say 'mostly' because as much as I hate to hear some people throw the word out there because they have nothing else to say, there is something to the concept. The reason people on here don't particularly enjoy menus at Olive Garden or Cheesecake Factory or wherever, is because they are NOT authentic and are tested in focus groups to provide the least possible offense and maximize the possible audience. I suppose they are very impressive for doing that. On a smaller scale, you find the same problem at countless cafes that offer uninspired versions of food trends from 10 years ago.
However, when you find a restaurant where the food clearly speaks of the chef's voice (whether the food is 'traditional' or avant-garde), that is something to celebrate.
