Grilled leek salad with espresso vinaigrette

Cut the white part of the leeks into 1" wide rounds. Steam for about one minute, then brush with olive oil and transfer to a grill to finish cooking, about five minutes. Alternatively, steam for about 6-8 minutes total, skip the grill. Allow to cool and douse with halved cherry tomatoes and this dressing*:

1 tsp espresso powder
1 tsp honey
3 tblsp red wine vinegar
1/2 cup olive oil
salt to taste

MMMMMMMMMMMMMMMMMMMMMMMMM good!

*You might find this in a current issue of a cooking magazine. I came across it while waiting in a doctor's office recently, but not sure which magazine it was. Sounded great for strong flavors like grilled vegetables, and it is.
