Danish seed bread.....

Who has a great recipe ??? All the talk on the Danish Food thread makes me hungry for the great breads under all those great toppings. Can't seem to find one on line that looks just right. Anyone have a recipe they love ? Have a pantry full of grains, seeds, flours waiting to be put to use

If you look at the various Smorrebrod websites, I think you can find several authentically Danish recipes for "rugbrøod" or rye bread. This one also has a video…

I was lucky to be able to find a dense chewy rye bread (with whole seeds, which you don't notice when eating it) but on the websites they say it's better to make your own.

Today I got an email advertising a cruise that starts in Copenhagen, then swings up to Oslo via a couple of picturesque fjords, and then over to the Shetland Islands and various stops in Scotland, returning at the end to Copenhagen. I never thought of myself as a "cruise" person but that sounds pretty interesting. If you're gonna look at fjords, why not be on a ship? I'm probably more interested because of all this recent research into Danish stuff. Then again when we first got married we bought Dansk stuff and Royal Danish silverware…

Sounds like a great itinerary, Frank. If we revisit the Nordic countries, we'd include a cruise along the Western shore of Norway. (A few years ago we did the "Norway in a Nutshell" day trip, which includes fjord-seeing, but the weather did not cooperate much.)
