What's your favorite lamb marinade?

Mine:

2 tblsp red wine vinegar
3 tblsp dry white vermouth
1 tbsp. regular soy sauce
1 tbsp. mushroom soy sauce
2 tblsp oil
1 tsp honey
1 tsp oregano
2 cloves garlic

Makes enough marinade for lambchops for four. I'm doing some tonight, in fact they're shoulder chops which believe it or not is my favorite cut for grilling.

MARINADE FOR LAMB:

¼ C Fresh lemon juice
1/3 C Olive oil
1 C Mint leaves loosely packed
1 tsp Lemon zest
½ Salt or Seasoned salt

Put all ingredients into blender, and blend into a green mayonnaise. This is a wonderful marinade for every cut of lamb chops. We use it for shoulder chops, marinating overnight.

For a leg:
1/2 c orange juice
1 c white wine
3 cloves garlic, minced
2 teaspoons of fresh thyme or 1 teaspoon of dried thyme
2 Tbsp of fresh chopped rosemary or 1 Tbsp of dried rosemary
1/4 teaspoon of fresh ground pepper
2 Tbsp olive oil

I like both your ideas! Carl's for chops and Jeff's orange-rosemary for rack of lamb, which I am planning on later this week. Thanks!

We have made the butterflied leg of lamb from Julia and Company (Julia Child) probably at least two dozen times, and the flavor and tenderness are terrific. I had to scout around online to find the list of ingredients:

2 large cloves of garlic
1/2 tsp salt
2 TBS dijon mustard
1 TBSP soy sauce
1 1/2 tsp thyme
2 TBSP lemon juice
1/4 cup olive oil

This is for a boneless leg, about 2.5 pounds.
