Finally, chicken gets some respect

Great article in the WSJ sent to me by a friend who knows I've eaten at The Willows, which gets mentioned here, several times now.

Oh god, I hope this doesn't cause chicken prices to skyrocket like eggs did this year after restaurant.com called 2014 "The Year of the Egg". ( http://www.dispatch.com/content/stories/business/2014/11/27/egg-prices-hit-record-high-as-demand-grows.html Chicken has been my regular protein go-to for some time now, by virtue of its price (less than most veggies per pound). I was kinda hoping my secret would never get out....

Great, another yuppie delight, and 'in' things do cause price inflation (e.g. cigars, and the absurd proliferation of 'special' single malts).

Afraid I'm not a fan of black chicken - my only question is 'why?'.

And I still wonder why America seems to venerate the all too often dry breast while abjuring the much tastier thighs, but that's another discussion.
