Mama's soup

It's been damp and chilly for quite a few days. All I seem to want is soup. Today, I decided on a soup I have not had since--oh well, it's been a long, long time.

Chicken-pastina soup.

I had to go find the pastina--little pasta things; these were shaped like stars.

Boiled a whole chicken in a large spaghetti pot with leeks, fennel, and bay leaves.

In a large soup pot, sauteed chopped carrots, onions, fennel, and garlic in an olive oil/basil ice cube that I freeze at the end of basil season. While they cooked, I lifted the chicken in the spaghetti insert from the boiled water--kept the water simmering--and broke up the chicken meat, tossing the skin.

When the vegetables had started to brown, I made a roux in a corner of the pot, then added some Madeira, stirring all the while. After the roux blended with the Madeira, I added the boiling chicken water, the chicken pieces, chopped parsley, and 1.5 cup pastina--set the soup to simmer for half an hour.

I remember mama.

Sounds wonderful; very interesting use of Madeira, too.

That does sound good. I was looking at making chicken and dumplings tonight before the sink clogged and we decided it would be best to have dinner out. Once the sink's fixed, this sounds like an excellent alternative to the dumpling thing.

Sorry to hear about the clogged sink, Mike. Do you own a snake? It is one of the best tools I own and has saved me quite a bit on plumbing bills. I have used mine on everything from the bathroom tub drain to clogged gutter downspouts.

I don't own one, and it's exactly what's needed. I'm pretty sure this is just a grease clog and that a snake will take care of it.

I've got snakes in the cellar, but I don't think they would like being stuffed in my drain...

All, I forgot one ingredient that I added simply because I wanted to see if I could get yellow in the soup the way some restaurants do but without using food dye. I dosed it with a little turmeric--got the color I wanted.

Jenise: I often use Madeira in cooking. In fact, I use it in place of red wine in tomato sauce. I always hated what red wine does to tomato sauce. Madeira sweetness balances somewhat tomato acidity.
