OK, now I'm in the market for some nice steak knives. Serrated. Will survive the dishwasher.

I see lots of "Laguiole" for sale but, like "Sabatier", there's no actual trademarking protection so quality is all over the place. Some "Made in France" are made in China or not any better. And some of each must actually be worth using for a couple decades.

Anyone know how to tell good from bad among the "Laguioles"?

Oh gosh, I do not know offhand but know it's all available on the internet, as I looked for them once before (Wikipedia, maybe?). In fact, I was able to find the set I have which are, apparently, a particularly swell quality Laguiole though I didn't know that when I bought my set of six at TJMaxx for like $10 just because I liked the look of them and needed more than the six Henckels I had for an upcoming dinner party. I would kill to find six more but this particular maker went out of business about 4-5 years before. So I went to ebay to see what I could find and believe it or not, I did a set of six just like mine for sale and got into a nasty bidding war with the one other person on this planet who probably was in my exact situation and therefore prepared to bid his ass off. I finally let him have them at $90. That was maybe four years ago and I've never seen them again.

Sur La Tables had a great set of Wusthofs for $49 last Friday--usual price more than twice that.

We have had a set of Wallace stainless steel serrated knives from China (yes China) for a least two decades or longer. They go into the dishwasher just fine and have kept their edge. Using them tonight, just as we do three or four time a week, this time with roasted super thick pork chops.
