Here’s a good, geeky cooking article in Serious Eats. I agree, and usually add minced garlic to a saute when the onions are almost done. How about you?

Unless it's basically whole cloves, I put sliced or minced garlic into the pan near the end. I want the garlicky flavor and I don't want little hard burned black bits mixed in with the rest of the food.

I add garlic at the end, after the onions.

Yeah, when I saw that article I thought, "Yup, that's what i do." I guess it's what EVERYBODY does! :lol:

This would probably be really good advice for beginning cooks, though, but I got the impression from its name that Serious Eats (a blog that I like a lot) was aimed more at advanced cooks.

That's the geekyest article I ever saw, and I loved it. Now I'm concerned about myself.

The garlic always goes in at the end. I live in fear of overcooked, bitter garlic. Since a lot of my cooking takes place in a wok that can happen fast.

This is one that I think most people learn quickly once they start cooking. It just takes one taste of overdone garlic to get the point across.

This one wasn't Kenji but "Daniel Gritzer CULINARY DIRECTOR," though. Or does Kenji edit all their stuff?

Yes, put the garlic in at the end. Actually we usually nuke our onions in oil and add garlic for an additional minute.
