Ocean Perch

by Fred Sipe » Sun Aug 17, 2014 11:15 am

The microwave thread brought up a discussion of tilapia. I find it pretty boring and tasteless regardless of where it comes from.

I've recently become enamored of ocean perch. About 5 bucks a pound here from the "fresh fish" case at the local super. 3 or 4 filets per portion for roughly $4. Dredged simply in flour and pan fried for about 4 miuntes a side in butter. Crispy, tastes like fish without being "fishy" and takes me back to the little panfish I caught in local creeks and ponds a long time ago.

Add a little local produce from the farm market simply steamed and a couple of slices of fresh tomato and for a quick summer meal it's about as good as it gets!
