I've been meaning to do this for some time and have just not gotten around to it.

Thanks to Katie in WA for posting her "FLDG Challenge: Make up your own risotto" back on Jan 6, 2010. The recipe looked too easy and too quick to ignore. We've tried this a dozen times or more, with variations, and have never had one that wasn't tasty. We've tried different cheeses (Gruyere, Manchego}, different meat (shrimp, ham) and despite my ham-handed (ahem) cooking skills, it's always been good.

I don't know if Katie is around any more, she hasn't posted in some time. If you are still around, Katie, thanks for making my life a little better.

Had to go back and review that thread. It was a good one - a number of interesting risottos come out of it.
