An easy appetizer

10 ounces smoked salmon (use the good stuff, mine was caught in Alaska over the summer)
8 oz cream cheese
2 -3 tablespoons cream
fresh dill
capers
nice bland round cracker
fresh ground pepper
caviar/salmon roe/ fish eggs of some sort. I wanted to use caviar but it was $65/ounce. The pink salmon roe was $19/2 ounces. The black caviar would have looked better but hey, looks aren't everything?!

Put the salmon, cream cheese, pepper and 1 tablespoon fresh chopped dill in the cuisinart and let er rip until smooth. Use the cream to get the consistency you want.

Spread onto the cracker, dot with 3-4 capers and a small spoonful of the roe.

What a delight this was. Flavors, textures (love that pop and salt sensation of the roe)and colors all combined to create a great appetizer. Served it with Vin de Bugey Cerdon pink sparkler and both the wine and the salmon went fast.
