Sauerkraut juice

by Bob Henrick » Sun Jan 27, 2013 12:02 pm

Today I am using the slow cooker and doing pork shoulder in sauerkraut, along with a peeled sliced granny apple. I will likely put in a cup or so of Riesling during the past hour of cooking. I poured off most of the kraut juice and drank it. Does anyone else here like kraut juice for drinking? BTW, I also like the juice from good home made sour pickles. And, now you all know why I am a curmudgeon.

I love sauerkraut juice too. When I make stuffed cabbage rolls with it, I add the juice in with the burger, rice mixture. I've also used it with other dishes such as ribs and kraut, and poured some of the juice over the potatoes roasted with it. I don't think I have even thought of drinking it though. But I do use it all up in some sort of application to other dishes, pickles, etc.

Winger, you like me, are sour enough without it! I just like the taste.

I have been known to drink the salad dressing in the bottom of a bowl. I like sour stuff!, so though I don't believe I've ever drunk sauerkraut juice it's totally something I would do. I usually add it to whatever dish I'm making, though.
