Oh yes, my Mom/Grandmother always made the best cranberry bread. Here's their recipe, Robert. It's from Our Favorite Recipes cookbook from the West Bend, WI farm ladies of 40's era. Make sure you use FRESH cranberries and not those Craisins.
Cranberry Bread
I always doubled or quadrupled it and used smaller bread pans if given as gifts.
2 cups flour
1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
1 cup sugar
1 egg beaten
2 TBS melted butter
2 TBS vegetable oil
1/2 cup orange juice
2 TBs hot water
1/2 cup chopped walnuts
1 cup cut fresh cranberries
Zest of one orange
Sift dry ingredients together. In another bowl, combine beaten egg, melted butter, oil, and hot water. Combine with dry ingred. Add orange juice. Stir until moistened. Fold in nuts, cranberries, and orange zest. Bake in greased 5x9x3 pan at 325 about 1 hr & 10 min. Cool - They make great gifts!
