Just made up this batch for our summer use on grilled veggies. It is excellent.
Lemon, Thyme and Mustard Basting Sauce
1/2 cup butter
1/3 cup finely chopped shallots
1/4 cup olive oil
3 Tbsp. Dijon mustard (start with one and build to taste)
2 Tbsp. fresh lemon juice
2 Tbsp. fresh thyme (start with one, and build to taste)
1 Tbsp. lemon zest
Heat until butter melts, and shallots are cooked.
I've used this on asparagus, zucchini, red onion slices and corn.
