Fried Black-eye Peas

Saw these on a Cooking Channel rerun of Good Eats. They were soaked overnight and then cooked a little and dried off. Then they were deep fried and salted and served like salted nuts. Looked great.

Has anyone tried these?

I haven't tried that with black-eye peas, but that's a very common technique used with lots of different dried legumes in Indian spicy snack mixtures.
