Walnuts or pecans! Nuts aren't mandatory, but since you've prompted me to think about it, Jeff, nuts do make the cookies better.

The cookies must be homemade, of course. Industrial processes do foods no favors, and this is particularly true of choco-chip cookies.

Voted "no nuts". I like the purity of a nut-free cookie. Not that I'd ever refuse one with nuts, mind you - it's a close call for me.

I can't think of an occasion where the dish is not improved by toasting the nuts first. (Even if I don't agree that there should be nuts in it!)

Funny, opposite's true for me. I love the taste that (raw, not toasted :) ) walnuts add to the cookie, but I also like that it typically means there's less chocolate. I prefer a lower chocolate-to-cookie dough ratio than most.

Given the mediocre quality of the chips that end up in many cookies (though not mine!!) I would prefer nuts to chips.

For me, freshness and warmth (being homemade) are my top criteria. In that sense, whether the cookie has nuts or does not becomes secondary to a large degree. If they are fresh out of the oven, I'm probably going to like them! :)

The same with bread. I LOVE fresh, warm bread. With such foods, warmth and "out of the oven enticement" seem to be 85% of the battle. Especially in regards to cookies or breads.

I agree with Jeff on the need for roasting. Same goes for seeds. I don't enjoy any seed or nut raw. I find a bitter component and find it most strong in walnuts.
